The first third or so of Death Note is really exciting, but after that it gets boring. I would highly recommend watching it, though.

Of all of them, I love Azumanga Daioh. Humor anime > action anime, IMO. Full Metal Alchemist, of what I've seen, is quite good too.
Also, in before Lufis: Rozen Maiden. Think Highlander with cute girls.

Although, I must admit I have not seen it yet, but I plan to. The only one I've seen is Yu-Gi-Oh which I really love.

Bleach is pretty awesome. I could do without some of the cheesiness that pops up from time to time, but the character development is great and the animation is top notch. One of the few "modern" ones I find worth watching of course the same could be said for most of the stuff put out over here.

I agree Bleach, but Death Note comes in at a close second because it is very interesting how it developed early on.

Why only one vote? I would say both Cowboy Bebop and Azumanga Daioh are worth checking out. Both Death Note and Fullmetal Alchemist have disappointing endings, so I personally am not a fan.

My vote would go to the Dragonball series, most notably DBZ. Yeah, I understand the complaints about it, but it has great storylines, epic action, and good humor to boot. And in case you're wondering, I liked it before it became super popular, and still like it even though it's fallen off the radar screen. Worth checking out, at least in my opinion.

ANyway, if you get into Bebop and like it, the complete series is up on Amazon in non-bootleg form for around $25. Considering how expensive the old box set was (a very small number was produced), this is a huge bargain. Ordered mine a half hour ago.
